Your body then sends white blood cells in to get rid of the casein proteins. However, since the molecular structure of these 7 amino acids are so similar to that of the pancreas tissues, the cells attack the pancreas as well, thus leading to diabetes because it affects insulin creation.
Casein is just one protein, one example. Other undigested proteins cause other autoimmune problems, like undigested acidic meat leading to rheumatoid arthritis and undigested wheat leading to celiac disease. What disease is created is based on the amino acid structure of that protein and what tissue in the body it resembles.
